Chef Luke Palladino's Ombra brings the flavors of Italy to the shores of Atlantic City. The name is derived from a colloquialism popular in Venice that translates to "shade." Venice's famous Gondelieri wound their way through the canals of the city transporting cargo and people. The work of the Gondelieri was exhausting and they often sought shelter and a moment of respite from the heat in the shade of the bell tower in San Marco Square. There, they would unwind at baccari, wine bars offering little antipasti called cicchetti, and a glass of refreshing wine. Hence the term Ombra - even today in wine bars throughout the legendary city, locals can be overheard asking for an Ombra. Chef Palladino's time in Venice offered him the chance to visit the city's trattorias and bring their unique components to Borgata. This time-honored tradition is respected by Chef Palladino who combines unique design, Outstanding service and cuisine that retains the convivial and welcoming warmth of Italy's trattoria.
